Super Easy Lavender Butter Cookies

We love butter and we are celebrating today by sharing (and eating!) these delicious lavender butter cookies. They are super easy to make and use only 6 ingredients! Only 5 if you don't include the lavender! This recipe was based from a plain butter cookie recipe that we stumbled upon years ago and tweaked a bit to accommodate lavender. If you do not like lavender or just want plain butter cookies (which are still super delicious!), just make another batch using the exact same measurements and omit the lavender. Read on for a step by step procedure! Full recipe is down below after the photos!

For this recipe, you will only need flour, sugar, vanilla, dried lavender and butter. *If your butter is unsalted, add in 1/4 tsp of salt.

Start by softening the butter in your bowl. (this can be done by leaving out the butter in room temperature for a couple hours)

Add sugar and vanilla and mix thoroughly.

Crush your dried lavender in a mortar and pestle set. Reserve some whole lavender for sprinkling on top.

Add the lavender to the mixture and incorporate all ingredients well.

Add in all the flour and combine everything well.

Your mixture should look like a thick dough like this (not wet).

You should be able to roll your dough into little balls like these.

Press the balls down with your spatula (or spoon) like this.

Sprinkle some sugar on top and loose dried lavender for decoration.

If you're choosing to leave the lavender out, press your balls down with a fork instead to create this pretty line design. Sprinkle some sugar on top.

Preheat your oven first at 220 degrees Celsius. Bake the cookies for ten minutes. Check your cookies. if they look under baked, put them back in for 3-5 minutes more.

Once they are done baking, transfer them to a cooling rack and let rest for a few minutes before you eat and store.

Enjoy with a nice cup of tea or eat them as is! They can get quite addicting!
