2-Ingredient Banana Pancakes

The great thing about staying home for long weekends is the luxury of long breakfasts. Unfortunately, the weekday has started. But that doesn’t mean you can’t enjoy your pancakes. Here we have a super quick easy-to-do Banana Pancakes made of 2 ingredients (yes, only 2!) And without the flour/extra carbs, it’s healthier too!
Ingredients:
2 medium-sized ripe bananas
2 medium-sized eggs

Optional addition:
Chia Seeds Vanilla




In a bowl, mash the bananas well with a fork. The riper the bananas, the easier they are to mash.
Scramble the 2 eggs with a fork in another bowl.
Add to banana mixture and stir together until well incorporated.

Mix in add-ons if you wish – here we added 1 teaspoon of chia seeds and ½ teaspoon vanilla.

In a heated skillet or pan, add butter or olive oil to grease if your pan is non-stick.
Place 2 tablespoons of the mixture in the pan.

Flip mixture when the sides have solidified or browned

Slowly remove the pancake with flat ladle

Add garnish as desired

We love how this 2-ingredient pancake can be modified in a lot of different ways by using various add-ons. We’ve tried using cacao nibs or a local hack is to finely chop pure tablea tablets (we’ve tried this and it’s really good!) You can add your different superfood powders as well. Be creative!
